Tasting Notes from His Palate to Yours

While we typically shy away from traditional tasting notes—encouraging you to connect with the wine in your own way—we’ve made an exception for Jonny. His personal evaluations are a reflection of his palate, his experience, and his interpretation of our wines.

Sauvignon Blanc

2022: Our Sauvignon Blanc has vibrant aromas of gooseberry, passionfruit and white peach. The mouthfeel is big and round with flavours of ripe mango, grapefruit, melon and a hint of grass. This full-bodied wine is all balanced with bracing acidity that results in this excellent expression of 100% sauvignon Blanc.

2023: A brilliant pale lemon colour. Elevated aromas of gooseberry, passionfruit, and a hint of citrus. Several tropical fruits on the palate with guava and pineapple very prominent, matched by excellent acidity and body. The small percentage of semillon adds a lovely rich texture to the finish. Drink now or hold 3-5.

 

Chardonnay

2021: A deep lemon hue with ripe aromas of pineapple, lemon curd, and caramel apple. Full flavours on the palate of ripe pear, baked apple, melon, and lemon tart. Creamy finish with a lovely round mouthfeel. Drink now or hold 3-5 years.

Rose

2022: This blend of Merlot, Pinot Noir and Gruner Veltliner is a lovely pale blush pink with a bouquet of red strawberry, cranberry, red plum, and candy apple. Robust flavours of red currant, lemon, rhubarb, and a touch of cinnamon stick on the palate. The voluptuous body is matched effortlessly with focused acidity making this a crowd pleaser for one and all.

Pinot noir

2022: A very clear pale ruby colour. Bright red cherry and raspberry with a hint of clove and mushroom on the nose. Juicy red fruits on the palate are met with a full body and elevated acidity alongside a touch of forest floor on the finish. A powerful and structured wine with ability to age for another 5-7 years.

 

M2

2021: This 50-50 blend of Merlot from our estate and Black Sage bench has rich aromas of dark plum tart, violets, marzipan, and cigar box. Flavours of dark cherry jam, black currant, toast, and leather round out a full-bodied and powerful expression of Merlot that punches above its weight.

Madcap

2015: Deep ruby colour with garnet tinges around the edges. There are lively aromas of developed bramble fruit, dark plum pie, camphor wood, and licorice. A full body and layered flavours of red and dark fruits along with licorice, thyme, sage and cigar box on the palate. This is a powerful and rich offering with dense character. Drink now or hold until 2027.

Estate Merlot

2020: This was a stellar vintage for Fairview Cellars and the 2020 Estate Merlot is a clear indicator of just how good it was. A clear medium ruby hue is accompanied by intense aromas of red plum, cherry, and baking spices. Bright flavours of plum, currant and leather are accompanied by healthy acidity, silky tannin and an extended finish. This driven and focused wine will age well into 2032 and potentially beyond.

Two Hoots

2013: The 2013 Two Hoots has layered aromas of ripe dark plums, BBQ spice, and tobacco. A luxurious mouth feel is met with flavours of dark cherry vanilla tart, cedar, and toast with a long finish and ultra smooth tannins. This wine has aged impeccably and is perfect for drinking now.

2021: Our Two Hoots has notes of black cherry, cassis, and a touch of anise. The palate is rich and full-bodied with flavours of black plum jam, blackberry pie, cloves, and cedar to round out a well-balanced and concentrated offering. It's always a fan favourite and this vintage won't disappoint.

2022: Two Hoots is the everyday wine that punches well above its weight and 2022 is no different. A clear deep ruby colour with a bouquet of black currant, cassis, ripe plum and mocha. The full body on the palate is met with flavours of ripe black berry, black cherry, sage and leather with a smooth tannin profile and acidity to match. A lengthy and sustained finish for an accomplished wine that will drink well into 2030.

Bucket of Blood

2012: A clear medium ruby colour with garnet rim. Underripe red fruits (cherry and plum) along with anise and clove. Elegant flavours of plum tart, black currant leaf and mint tea are met with silky tannins and a lengthy finish. A structured and elegant wine that can be enjoyed now until 2026.

2013: Clear medium ruby with garnet tinge. Bouquet of red currant, blueberry, and rhubarb pie. Layered red fruits on the palate are complemented with tobacco leaf and toast flavours. A tart and effortless finish cap off a robust offering. Drink now until 2026.

2014: Clear medium ruby with garnet tinge. Lifted aromas of bramble fruits, cherry cola, and red licorice. Full body on the palate with flavours of blueberry jam, baking spices with hint of vanilla. This is a powerful and fruit forward wine that can be enjoyed now until 2026.

2021: Our Cabernet Franc-Syrah blend has intense aromas of ripe red plum, blueberry, and black pepper. The palate of red cherry, blueberry tart, and spice box are matched with a full body and solid finish. The solid structure and excellent flavours are not for the fainthearted.

​​

2022: A cult classic wine that really shines from the excellent 2022 vintage. A medium ruby colour with aromas of dark plum, dark cherry, violet and a hint of black licorice. There are layered flavours of ripe savoury fruits along with dried herbs and cedar. There is a solid body and clean finish on this offering that’s showing well in its youth. Drinking well now until 2030.

The Bear

2015: A clear deep ruby colour with garnet tinges, the 2015 version of The Bear has intense aromas of savory dark plums, dark cherries, cigar box and thyme. A very full body of rich flavours of dark fruits are highlighted along with tobacco, leather and a hint of cinnamon. The tannins are silky, the acidity is composed, and the finish is lengthy making this a powerful and bold wine that is showing beautifully right now. Drink now until 2026.

2020: The cult classic blend begins with aromas of dark plum, black cherry, ripe blueberry, white pepper, thyme, clove, and candied ginger. Rich flavours of black currant, blueberry jam, chocolate vanilla, nutmeg, leather, and mocha combine for a strong finish textured by smooth tannins. This vintage is full bodied, elegant, and expressive. It's showing well now but will age impressively through to 2028 and beyond.

2021: A deep, dark ruby colour with intense aromas of black berry pie, black currant, cigar box and toasted cedar. Elevated characters of ripe blueberry and cassis are complemented with vanilla mocha, toast, and leather leading to a sustained and lengthy finish. A bold and fruit forward wine that will age gracefully until 2030.

Cabernet Sauvignon

2012: A clear deep ruby colour with developed aromas of black berry, cassis, and menthol. Elevated and intense flavours of black plum and black cherry are complemented by a medicinal herb and black tea finish. A silky tannin structure allows for a complex and driven wine. Drink now.

2013 (Hailing A Cab): Clear medium garnet hue with an intense bouquet of ripe black plum preserves, camphor wood, and baking spices. Developed flavours on the palate of plum tart, licorice and spice box lead to a robust finish. A bold and layered wine with full body. Drink now.

​​

2020: Clear deep ruby colour. Aromas of black currant, black cherry, vanilla cola, and rhubarb. Elegant dark fruits on the palate with toasted cedar and black tea on the finish. The elevated acidity on this wine and silky tannin structure will ensure age ability well into 2032.

Block 3

2019: The first vintage in which Block 3 takes over from the former Iconoclast does not disappoint and may be even better than its predecessors. We start with a dark, inky ruby colour that has a bouquet of cassis, black plum, menthol and cocoa. A full body is met with flavours of bold, rich dark fruits along with dried herbs and toasted oak that round out a sustained finish. A terrific wine that loyal fans will enjoy for years to come. Drink now until 2034.

Iconoclast

2014: Our Iconoclast has a rich, deep ruby colour with a tinge of garnet on the rim. There are intense aromas of stewed plums, black cherry, mocha, chocolate, clove, prune jam, and fig tart. Concentrated flavours on the palate of chocolate, vanilla, blackberry, spice box, anise, leather, and with a hint of eucalyptus. An incredibly well-balanced, complex wine with a lengthy finish that lingers well after the last sip. This is a very special drop and is showing impressively right now.

2015: Clear deep ruby with garnet tinges. There are rich aromas of developed dark fruits (cassis and black currant), menthol, cedar, and baking spices. Concentrated flavours on the palate of ripe blueberries, cocoa, mint, and a touch of eucalyptus. Powerful and expressive wine that will drink well into 2027.
